Smith's Bargain Recipe

The case pack deal is back , though not nearly as good as the last event. There arre still some good deals to be had . Chicken by the 40lb case seems to be the best deal of them all . Visit 1 Million Chicken Dinners for a tasty Colombian Chicken stew and other interesting dishes to make with all that chicken.

Milk is nicely priced at 1.89 . A friend I have freezes milk , anyone else do this ?

Pick up a case of the Bumblebee tuna and Libby's Canned Veggies, Can't be beat at .50 each , but I have coupons so ;-) I'm pickin' them up for .27 and .20 respectively !

Since the kids are going back to school there may be a weeknight or 2 where the temptation of fast food v cooking dinner might have you stopping at the drive thru for some expensive and nutritionally lacking "EASY" dinners. This week's recipe is based on a Kid favorite PB & J and at .62 a serving , and 2 minutes to make , you can provide a fast, delicious and very kid friendly FUN dinner to your family

Peaches are just .99 a /lb at Smiths . This is a perfect time to pick up some delicious summer fruit . Some other OK values for

Grilled Chicken With Balsamic Peach Marinade Recipe
Ingredients
1/8 tsp ground black pepper .
1 tbsp Dijon mustard .
1/2 tsp garlic, crushed .
4 chicken breasts .
1/2 tsp salt .
1 tbsp fresh thyme .
1 tsp honey .
1/2 c balsamic vinegar .
1/2 c olive oil .
1 c fresh peaches, mashed
Directions
Step #1 Combine vinegar, mustard, salt, honey, pepper, garlic, & thyme.
Step #2 Whisk until well mixed, then add olive oil & mix.
Step #3 Just before you are ready to marinate chicken, stir in the peaches.
Step #4 Pour over chicken breasts.
Step #5 Allow to marinate for at least 2 hrs & grill.

Stuffed Peppers

Prep Time: 15 minutes
Cook Time: 35 minutes
Ingredients:
4 large bell peppers
8 oz. tomato sauce
8 oz. shredded cheese (mozzarella preferably)
2 cups cooked rice

2 cups cooked ground chicken, turkey or beef ( whatever is on hand or on sale)

Preparation:
1. Cook rice and meat , mix together, season with S &P to taste
2. Cut off pepper tops, and remove the seeds.
3. Fill peppers with rice. Top with tomato sauce and cheese.
4. Place in a baking dish; cover with foil; and bake at 350 for 35-40 minutes. Serves

Since Smith's has begun promoting its 20% off on the items you use most I have not found any great deals in their circulars. Sadly , even the items that are supposed to be 20% less are , in my opinion , not anywhere near a great deal . I guess I'll still be cruising the Smith's aisles to get freebies and good deals on their clearance items ; but in so far as the circular promotions , NO thanks !

I realize that you are here for my BARGAIN RECIPE , and only have access to Smith's or Kroger so I won't disappoint. Just be sure to use the coupons from our coupon printer to the right to get the most money off and visit our friend's at http://afullcup.com to match up the items you need to available coupons.

Bagain Recipe

Belize Chicken

4 slices OSCAR MAYER Bacon, chopped
1/3 cup KRAFT Zesty Italian Dressing
1 medium onion, chopped
1 whole chicken (3-1/2 lb.), cut up
4 oz. (1/2 of 8-oz. package) PHILADELPHIA Cream Cheese, cubed
3 cups hot cooked white rice

COOK bacon in large skillet on medium heat until crisp. Remove bacon with slotted spoon, reserving drippings in skillet. Drain bacon on paper towels; set aside.
STIR dressing into reserved drippings; cook 1 min. Add chicken pieces; cook 5 min. on each side or until browned on both sides. Add onions. Reduce heat to medium-low; cover. Cook 20 min. or until chicken is cooked through (170°F).
TRANSFER chicken from skillet to serving dish; cover to keep warm. Add cream cheese to skillet; cook until cream cheese is melted and sauce is well blended, stirring constantly. Serve chicken over the rice; top with sauce.

( Whole Chickens are at a good price at Smith's this week (.77 /lb) so do stop in and pick up a few to add to your stockpile !)

Ham and potato Stir Fry

I like this recipe because it's quick , easy and Hearty

Cube

Ham Steak ( 2.99/lb)

6 potatos ( sliced thin) ( .50 cents )

1 onion ( .50 cents)

1 can Cream of Celery soup ( .75-1.00)

Fry Ham Steak , potatoes ( microwave peeled potatoes, wrapped in a wet paper towel, 10 minutes to speed up cooking process ) and sliced onion.

When done add can of cream of Celery soup and 1/4 can of water .

blend until soup is smooth and creamy.

Serve alone or over lightly boiled shoestring carrots ( on sale by the bag at Smith's as well)

Cheesy Chicken Bake
2lbs chicken breast .99/lb =$1.98
2 boxes Kroger Mac & Cheese .39 = .78
½ bag kraft cheddar cheese .75
1 bag Kroger Frozen Veggies carrots ( thawed) .91
1 onion
Cook Mac and Cheese according to package directions
bake chicken breast and sliced onion , salt and pepper to taste , cool and cube .
Mix chicken/ onion , thawed veggies, and mac and cheese , place into a casserole dish.
Cover with ½ bag Kraft Chedder Cheese.
Bake at 375 covered for 15 minutes
Uncover and Cook 5 more minutes.
